Custard

Custard is similar to pudding. One of the main differences is the use of eggs as the thickener. Due to the use of eggs, custards have a more velvety texture. They are either baked or cooked over gentle heat on the stove top.

How do you make a custard pie to splat in someone's face like on a tv show?

I hesitate to answer this question, but believe it or not, we were all young once, so. . . DO NOT use custard. It's heavy and it could injure someone. Do exactly like they do on TV: Buy a commercial graham cracker crust. Fill it with whipped cream -- squirting it full of canned Redi-whip is the easiest way. Take aim and voila! You'll get a big splat without a lawsuit. (maybe.) Don't ask me how I know this.

What happens to the particles when custard is heated?

When things are heated they are receiving energy, which causes the particles within the substance (in this case, custard) to want to increase their velocity (aka speed) the problem with this is that they will keep bumping into other particles which also have high velocity, keeping the overall object generally stationary. On the atomic level (very small scale) all the particles are vibrating at a magnitude equivelent to the energy they have gained.

Also the chemicals within the custard may gain enough energy to break their inter-molecular forces (aka Van der Waals' forces) which hold molecules within the custard together. If heated high enough the atoms may gain enough energy to overcome the bond energy holding them together in the form of molecules... If these break the custard will boil off into the atmosphere.
