Flat Bread for Gyros This recipe makes soft pita rounds that should be brushed with olive or coconut oil and grilled in a Formbys Grill , heated in a skillet or toasted in a toaster oven before using and serving. Serve wedges with dips, as a wrap for sandwiches and in other creative ways. Ingredients: 1 Tablespoon active dry yeast 1 Tablespoon raw sugar ½ cup warm water 4 cups wheat flour 2 teaspoon real salt 1 cup warm water 1 Tablespoon olive or coconut oil Preparation: Dissolve in the yeast and sugar in ½ cup of warm water and set aside, covered for 15 minutes. Dissolve salt in the remaining 1 cup of warm water. In a large mixing bowl, add flour and make a well in the center. Add yeast mixture and salt water . Knead with hands for 10 minutes in the bowl. Add olive oil and continue to knead until all oil is absorbed. Shape into a ball in the bowl, cover, and place in a warm area to rise until doubled in volume, approximately 1 ½ to 2 hours. Punch down the dough and knead for 5 minutes more. Preheat oven to 450 Degrees and lightly oil baking sheets. Take pieces of dough slightly larger than an egg and roll out on a floured surface to a thickness of ¼ inch. Prick the bread with a fork in several places. I like to weigh each ball to be 2.5 oz. Place on baking sheets or a pizza stone on a bottom rack and bake for 3 minutes. Need not turn over. Remove from oven and place on a tray covered with a clean dishtowel, with another clean towel on top. When thoroughly cooled, pitas can be stored in plastic bags in the refrigerator, or frozen. Before using , brush one side of bread with olive or coconut oil and heat in grill for a few minutes. Hold in one hand with hotpad, fill up with meat, onions, tomatoes, feta cheese and top with yogurt / cucumber sauce. Serve while warm. I like to double this recipe and mix and knead everything in my bosch. This bread freezes well and makes a fast meal when the meat and bread are made in advance. A good tortilla press makes it easier also. I find that rolling out the ball pretty thin (less than ¼ inch thick ) makes an easier bread to stuff. Remember to poke with fork after rolling out. Gyro Meat Recipe 1 medium onion, finely chopped or shredded 2 pounds ground lamb or beef or other ground meat 1 tablespoon finely minced garlic or 5 cloves 1 tablespoon dried marjoram 1 tablespoon dried ground rosemary (You can substitute 2 tablespoon dried Italian herbs) 2 teaspoon real salt ½ teaspoon freshly ground black pepper 1 tablespoon habanero pepper salsa (optional) Put the onion in a food processor, add ground meat, seasoning and process it until it is to the fine paste stage. Preheat the oven to 325 degrees. Put the mixture into a loaf pan, press it so the pan fills completely. Smooth out the top. Place the loaf pan into a larger pan with some water in it and bake for 60 to 75 minutes or until it reaches 165 to 170 degrees. Check with a meat thermometer. Remove from oven, drain off any fat. Put the loaf pan on a rack. Wrap a brick in aluminum foil and put it directly on the surface of the meat and allow it to just sit there for 15 to 20 minutes, until the internal temperature reaches 175 degrees. Slice and serve on flatbread with cucumber yogurt sauce, chopped onion, tomatoes, crumbled feta cheese. Yogurt Sauce 1 medium cucumber ½ onion minced 4 cloves garlic, minced 1 package stevia or 1 teaspoon raw sugar 2 cups plain yogurt Blend the cucumber and onion and minced garlic in blender. Stir into yogurt.
