If the temp fluctuates There is a blockage in your heater radiator. ( water runs through it always) Shows up more going up hill or when the aircon is on. Bypass the heater to check. The main radiator could do with a flush. With the heater bypassed there is no burping needed or airlocks in the system. I put a head gasket fixer through the system in case the overheat caused any problems. No problems for 20000 ks now. I live in australia no need for a heater anyway. ( Quoted $1000 for heater replacement and $4000 for head gasket). My fix $15 . Nothing to lose.

On the left side (standing at the front facing the back) remove all of the air intake stuff, 4 bolts. On the right side, remove the washer fluid tank, 2 bolts and 2 connectors.
