As Africa is a large continent, is inhabited by just over a billion people and covers a great geographic and socioeconomic range it is almost impossible to say "what Africa eats".
Cultural as well as geographic locality would play a strong role in what food stuff are produced and consumed within a specific local.
However, much of Africa is relatively undeveloped, and for this reason it is safe to assume that the bulk of foods are unprocessed and come from primary agriculture.
These would include basic/ staple foods such as:
Meats:
Goat, Lamb, Beef, Pork, Chicken and fish
Grains:
Corn/ Maize, Wheat, Rice, Sorghum (as well as grain products such as bread)
Vegetable's:
Beans, Eggplant, Tomato, Potato, Cassava, Cabbage, Peppers

Milk (from various sources), Water, Juice

To this day, American Samoa is known as an unincorporated territory of America, and now have their own Governor and First Lady (this came into effect in 1967). "SAMOA" on the other hand has never been acquired by the U.S and has been an "independent" nation since 1962. Independent, in that the country has its own government, Head of State and currency (American Samoa uses US dollars).
