Pretty much what it means to anybody else. I not a crack maker or anything but I believe the hole might be so the cracks might get the just the right amount of air in them. I know this because I have made bread and cookies and crackers need to be flat.

What can be used to substitute mashed banana in bread?

I am about to find out!

Personally I've done it a few times. I've never tried it with a green plantain as they are starchy and more like a potato, but I've had great results with ripe plantains. My recipe calls for 3 medium cavendish bananas, but I usually use 1 decent sized plantain and 1 regular cavendish banana. You may want to lessen the sugar you add slightly though, as the plantains seem to be sweeter than a typical banana when ripe (of course this might just be my taste). Good luck

Why was it named soda bread?

In traditional English usage, the term "sweetbread" does not refer to any actual bread such as sandwich bread, buns or rolls, but to a category of meat, specifically, the thymus and pancreas glands, brain and other internal organs of butchered animals. The origin of the term goes back at least to the 16th century, and is thought to refer to the thymus glands because they generally have a rich, mildly sweet flavor. See the link below for more information.
> In earlier centuries, the words "meat" and "bread" both referred to food in general, and were used interchangeably.
