INGREDIENTS
1 lb. (450 grams) chicken breast, cut into thin strips
3 Tbsps. (45 ml) soya sauce
1/4 tsp. (1 ml) salt
1 tsp. (5 ml) Hot Pepper Sauce
3 slices scotch bonnet pepper
1 medium onion, cut into wedges
1/4 cup (60 ml) vegetable stock
1 Tbsp. (15 ml) vegetable oil
1 tsp. (5 ml) cornstarch
1/2 cup (125 ml) nuts
1 Tbsp. (15 ml) sherry
1 small sweet pepper, cut into small squares
METHOD
In a bowl combine chicken, 1 tablespoon soya sauce and salt. Marinate for 1 hour.
Heat oil in a wok or frying pan; add chicken and cook for approximately 5 minutes over medium flame.
Dissolve cornstarch in broth and add to chicken. Stir in remaining soya sauce, hot pepper and nuts.
Simmer for 5 minutes.
Remove from heat and stir in sherry before serving.
