How do you tell if eggs are fertile?

I guess there are two answers to this question: one hi-tech answer and one low-tech answer.

The low-tech answer: A male is fertile when he can impregnate a female.

The high-tech answer: Conduct a semen analysis; combine findings for sperm count, motility, morphology, volume, sugar levels, pH, and so forth, and compare with normal levels. This is commonly done when a couple cannot conceive.

To answer your question in another way, human males become fertile by the process of puberty. There is no exact calendar date for when it starts and finishes, but the end product of puberty is normally a sexually mature, fertile person. On average, puberty sets in between 13-16 years of age, and can take anywhere from a few months to a few years to complete. I think it's usually done by the time you're 17 y.o., but for some it could be done as early as 10 y.o.

How many eggs in a score?

Do you remember Abraham Lincoln's Gettysburg Address? It was delivered in 1863, 87 years after the 1776 US Declaration of Independence. It began, "Fourscore and seven years ago ..." A 'score' is just another way of saying 20. Twenty of anything. It's similar to 'dozen' being just another way of saying 12. Fourscore is four times 20, or 80. Fourscore and seven is 80 plus seven, or 87. Lincoln could have begun his speech by saying, "Eighty seven years ago." But, "Fourscore and seven years ago" was a much more memorable way of expressing the same time frame. Way back then, eloquent oratory was a highly valued skill. Unlike today, with 'Yo, dude' and its ilk.

Why is it recommended that a copper bowl be used when whipping egg whites?

There's no reason why not. Just make sure everything--bowl, beaters, and egg whites--are at room temperature. Some cooks place the bowl of egg whites over the pilot light of a gas stove briefly (a few minutes) to take off the chill from the refrigerator. Be careful when using this method. You don't want to cook the eggs, just bring them to room temperature before beating.

How hot does a stove have to be to make scrambled eggs?

I would set the temperature between medium and high.

If you like your eggs softer and fluffy, the lower the temperature the better. Medium High temperature makes the eggs firm (as some people prefer).

Is a raw egg more dense than a boiled egg?

The density of an egg that I boiled was 1.02 * density of tap water.

The density of a raw egg was 1.06 * the density of tap water.

The mass of the egg did not change so the volume increased slightly.

With a raw egg and a boiled egg covering in water, if you add salt and mix slowly you find that the boiled egg will float first and if you continue to add salt you get both to float.

Interestingly, recipes for making a brine solution for food preparation frequently tell you to put a raw egg in water and add enough salt in solution to make the egg float. This assures enough salt for a good brine solution.

How long can egg whites out of the shell remain at room temp?

Not giving a scientific answer, but just from experience ... No. Here in Spain the eggs are not refrigerated in the stores -- just set out in boxes at room temp. until they are sold. We haven't had any problems with them.

It was explained to me that fresh eggs do not require refrigeration. However, once refrigerated something in the proteins change and then they require refrigeration. The old time markets in the US didn't keep them cold until they had spoiling problems in the falla nd spring when the eggs would get cold from being outside then warm with the day. I can't verify if this is an old wives tale or not, but I buy farm fresh eggs and don't refrigerate them. They are delicious and I've never had a problem.
