Paso Fino's are a relatively good breed for endurance. Better breeds would be the Akhal-Teke and the Mustang as both of these breeds are more than capable of out performing Arabians if properly conditioned.
There are several reasons why a horse would chew on boards.
1: Lack of fiber in the diet. If a horse does not get enough fiber in it's diet it will typically begin trying to eat wood in the form of board or even tree bark.
2: Lack of 'chew time'. This usually accompanies reason1. A horse is designed to eat small amounts of high fiber food all day long. A lot of modern horses do not get the amount of feed and thus chew time that they need. When this is lacking they will find a way to make 'chew time' for themselves.
3: Ulcers/stress. A horse with high levels ( and/ or a high grain diet) of stress is likely to develop ulcers, The horse will then begin to crib or wind-suck to bring air into the mouth in an attempt to relieve the pain from the ulcers.
Always have a knowledgeable equine veterinarian exam your horse if you notice unusual behaviour.

Once I made the mistake of whipping a horse when going into canter and it got very upset and so did my instructor, so just use it for correction when needed. Now, if you want to look really nonthreatening or 'a friend' sort of slouch your shoulders, keep your head down, and don't make eye contact. When you want to pet a horse, always offer the back of your hand to him/her, like a dog, and when he blows at it, your ok. Also, when the horse blows on your hand, it's his way of saying hi, so when you blow on his face (not too gently, it might tickle, and i know this sounds really weird, but it's true.) your saying hi. there really is no way to sum up the horse language, it's sort of like trying to answer the question "how do you speak English?" you can't really answer the question. Bridle training a horse can take a long time. You can start the horse out young however and get them used to it. While the horse is still a foal (If you have the horse while it's that young) get it used to having a leather foal halter on and lead it around gently. As the horse gets older, around a year old or so you can place a bridle (Without the bit) on it's head and begin to lead it with the bridle on. After the horse accepts this you can introduce the bit, a very gentle snaffle type bit is best, give the horse treats while it has the bit and bridle on at the same time. Again once this becomes second nature to the horse to have a bridle and bit on you can begin training the horse to follow the pressure from the bit and how to turn, move forward, and backwards. You'll need a helper for this portion of the training. Eventually the horse will accept the pressure and you will have a horse trained to the bridle.

Once a horse starts windsucking it wont stop as it makes the horse feels good, it sends endorphins to the brain which causes this feeling. But it can cause serious colic!

Well you'll need to find out whats causing the bucking in the first place. It could be a sore back, hocks, knees etc. Or an ill fitting saddle. Have a Equine vet do a work up on the horse to rule out soreness. After that have someone watch you ride the horse to evaluate the way you ride, if nothing seems to be the matter then the horse has developed a bad habit of bucking. To stop the bucking you need to figure out exactly when it's going to buck and intercept the behaviour. If he does it as you go into the canter you'll need to focus his attention into going forward instead of 'up' into a buck. If he continues to do it after several weeks of corrections you may need the help of a professional trainer.
