Its because Inuyasha's a stubborn stupid dog to like any else other than kagome.

He likes that fact that she is confident and happy, it balances his depressive tendencies. He likes that she is kind and gentle, but also comes with a fiery temper that he greatly enjoys stoking. He learns from her, how to feel affection and show that affection for other people, etc., and he is incredibly grateful to her for that. His mother was the only person to love him for him, and so, when Kagome proves again and again that she loves all of him, it touches him. He also greatly appreciates that she never made him choose between her and Kikyo, that she truly only wanted him to be happy, no matter what it did to her. And of course it didn't hurt that he found her very sexy :)
