Rather than absolute file types both .MOV and .MP4 are what are known as Container formats. They can hold various file types in a single file. The .M4V extension is a variation of the .MP4 (MPEG-4) type known as MPEG-4 Visual. So the question is: what do you want to do with the file?

If you want to edit the file then the .MOV option is a good choice as it allows editing to take place without the need to handle and rewrite the original files.
