3 egg yolks
1 pint (570 ml) double cream
1 oz (25 g) caster sugar
1 level teaspoon cornflour
5 trifle sponge cakes
2 oz (50 g) flaked almonds, lightly toasted
some raspberry jam
2 fl oz (55 ml) sherry
8 oz (225 g) fresh or frozen raspberries
2 small bananas, peeled and sliced thinly You will also need a large glass bowl. Break the sponge cakes in pieces and spread a little raspberry jam on each piece. Then put them into a large glass bowl and sprinkle the raspberries and sherry over them, giving everything a good stir to soak up the sherry. To make the custard, heat ½ pint (275 ml) of the double cream in a small saucepan. Blend the egg yolks, sugar and cornflour together thoroughly in a basin, and when the cream is hot, pour it over the egg mixture, stirring the whole time. Now return the custard to the saucepan and stir over a very low heat until thick, them remove it and allow to cool. Slice the bananas, sprinkle them in amongst the raspberries and pour the custard over the sponge cakes. Whip up the remaining ½ pint (275 ml) of cream and spread it over the top. Decorate with the flaked almonds. Cover and chill for 3 or 4 hours before serving. Increase dough recipe size from 10 to 40?
You can increase all ingredients of your normal dough recipe by four and get the same results. except you'll need bigger bowls and more pans. The rest, the time to mix, the kneading or folding, the final baking time (if you go from 1 loaf to 4, not one to one giant loaf) don't change.

There are several websites that one can find mollusk recipes including MyGourmetConnection and Saveur. One can also go to a Barnes & Noble bookstore and read a recipe book.
What is the recipe for baleadas?
Baleadas is a Honduran "sandwich" which is made with a wheat flour tortilla folded in half and filled with mashed fried beans and most commonly, cheese and cream.
For tortillas take:
3 cups of all purpose flour
2 tsp. baking powder
1 tsp salt
4-6 tbsp vegetable oil or lard.
1 1/4 cups of water
Mix dry ingredients then add the oil, mixing well. Slowly mix in water (this is tricky you have to get the dough to become smooth enough but not sticky, if it starts to stick to your hands add more flour). Knead dough for 2-3 minutes. After dough is smooth roll into small balls about the size of a golf ball. Cover for about 15 minutes then roll out into a circle and place on a medium heat skillet.
Fill the tortillas with hot refried beans (or put some beans in the blender then heat) and add grated queso duro (a hard salty cheese) and mantequilla (much like sour cream). Scrambled egg, avocado and meat are popular additives.
