A snail must be purged before you can cook and eat him. You must keep the snails alive and captive for at least a week. Some people recommend feeding them corn meal, others to just let them fast during this time. After they have been purged they must be boiled for quite some time and the scum that forms on top of the water cleared until there is no more. It is actually quite tedious, long process. I recommend you buy canned snails and avoid the hassle.
