Is it exceptionally cold? I'd be surprised if it is. I can't speak for Carlsbad Caverns as I've never visited it, nor studied its formal descriptions and survey, but the mean annual air temperature in most major caves stabilises at that of the air in their local area.

This makes caves seem warm in Winter and cool in Summer, and if the annual temperature range of New Mexico is high then the effect on the region's caves will be more marked. Not quite: the columns formed as the rock cooled. The cave did not exist until long after the island formed, and was then, as you say, cut by erosion. The volcanism was associated with the inception of the Atlantic Ocean.
