Sounds like an urban myth to me; why should there only be ten minutes in its life when a pear is perfect to eat? If that were the case, grocery stores would be throwing out dud pears by the crateload.
To check if a pear is ripe, press very gently with your thumb at the top of the stalk end, as you would with an avocado. If there is no 'give' or 'movement' the pear should be left, unrefrigerated, until it is ready to eat. Putting pears next to bananas helps them ripen.
If the pear is ripe but you are not yet ready to eat it, simply refrigerate it to prevent further ripening, but don't leave it too long; you don't want an overripe pear.

If you eat a japonica apple directly from the tree, your mouth will take on the appearance of a 100-year old prune!!

Certain varieties of apples have more of a tendency than others to turn brown when cut. Some agriculturists have worked on select breeding for a less-browning characteristic. Also, storage apples will brown quicker than fresh apples. Right now, you should be getting fresh apples in the stores.
If you are referring to purchased cut apples, there are preparations - like lemon juice and sulfites - that will reduce browning.
