You can use any standard cake recipe or cake mix, and simply bake them in a cupcake pan at 350 - 375 degrees for approximately 15 to 17 minutes. Remember to use cupcake liners or grease and flour the cupcake pans just as you would a regular cake pan.
Basic Cupcake Recipe, makes 1 1/2 dozen cupcakes:
1/2 cup shortening
1 3/4 cups self rising flour
1 cup sugar
1 egg
3/4 cup milk
1 teaspoon vanilla
Place shortening in mixing bowl, add sugar and blend well. Add flour, then add egg and half the milk, mix till flour is moistened. Beat 2 minutes at low speed with electric mixer. Add remaining milk and vanilla, beat 1 minute more. Pour in prepared cupcake pan, bake at 375 degrees for about 15 minutes, or till done. Do not overbake or cupcakes will be dry. If not using cupcake liners, remove from pan after about ten minutes to prevent cupcakes from sticking to pan. Frost with icing of your choice; any cake icing will work well.
BASIC RECIPE:
50g self raising flour
50g butter
50g castor sugar
1 egg
Splash of milk
Drop of vanilla essence
I triple this to make about 15 cakes, the recipe is easily multiplied.
