You are trying to ask, "How do you make broasted chicken?" I believe the word broasted was started by a company that manufactures a pressure fryer, and they call the process "broasting". It is a process whereby the chicken is placed in the grease in the broaster and is cooked when the skin is brown and crispy and the inside of the chicken is still very moist. Chicken Essence is basically the stew left behind after a whole chicken is boiled using a very high temperature and pressure. As the stew is being formed the proteins and amino acids take on a molecular structure that when taken helps elevate alpha and beta waves of the brain.

INGREDIENTS
1 lb. (450 grams) chicken breast, cut into thin strips
3 Tbsps. (45 ml) soya sauce
1/4 tsp. (1 ml) salt
1 tsp. (5 ml) Hot Pepper Sauce
3 slices scotch bonnet pepper
1 medium onion, cut into wedges
1/4 cup (60 ml) vegetable stock
1 Tbsp. (15 ml) vegetable oil
1 tsp. (5 ml) cornstarch
1/2 cup (125 ml) nuts
1 Tbsp. (15 ml) sherry
1 small sweet pepper, cut into small squares
METHOD
In a bowl combine chicken, 1 tablespoon soya sauce and salt. Marinate for 1 hour.
Heat oil in a wok or frying pan; add chicken and cook for approximately 5 minutes over medium flame.
Dissolve cornstarch in broth and add to chicken. Stir in remaining soya sauce, hot pepper and nuts.
Simmer for 5 minutes.
Remove from heat and stir in sherry before serving.
What is the best way to cook a chicken leg?
I would never fry the legs whole, they're harder to handle, they take up too much room in the pan, and the drumsticks have less meat and cook quicker than the thighs -- I would cut them into thighs and drumsticks before cooking (its easy, flip the leg skin side down on the cutting board, look for a line of fat running across the width of the leg, approximately in the middle, then place your knife slightly below that line of fat, in the direction of the drumstick, then you should be able to cut down through the chicken pretty easily and quickly.) I also like to bone the thigh meat, but that's me.
Since dark meat takes longer to cook than white, I like to dip the dark meat pieces in flour, then buttermilk, then flour and buttermilk again.
