When was fish and chips invented?
Fish and chips (sometimes written "fish 'n' chips") is a popular take-away food that originated in the United Kingdom in 1858 or 1863.
It consists of deep-fried fish (traditionally cod, haddock or flounder) in batter or breadcrumbs with deep-fried chipped (slab-cut) potatoes.
Potato Chips weren't discovered.
They were invented, because, you would chop a potato into slices and fry them. The inventor of the potato chip was George Crum... In the summer of 1853, American Indian George Crum was employed as a chef at an elegant resort in Saratoga Springs, New York. On Moon Lake Lodge's restaurant menu were French-fried potatoes, prepared by Crum in the standard, thick-cut French style that was popularized in France in the 1700s and enjoyed by Thomas Jefferson as ambassador to that country. Ever since Jefferson brought the recipe to America and served French fries to guests at Monticello, the dish was popular and serious dinner fare. At Moon Lake Lodge, one dinner guest found chef Crum's French fries too thick for his liking and rejected the order. Crum cut and fried a thinner batch, but these, too, met with disapproval. Exasperated, Crum decided to rile the guest by producing French fries too thin and crisp to skewer with a fork. The plan backfired. The guest was ecstatic over the browned, paper-thin potatoes, and other diners requested Crum's potato chips, which began to appear on the menu as Saratoga Chips, a house specialty. Soon they were packaged and sold, first locally, then throughout the New England area. Crum eventually opened his own restaurant, featuring chips. At that time, potatoes were tediously peeled and sliced by hand. It was the invention of the mechanical potato peeler in the 1920s that paved the way for potato chips to soar from a small specialty item to a top-selling snack food.

The problem with the word "cod" is that it refers to more than one kind of fish, some of which are kosher types and some that aren't. Those "cods" that have fins and scales (when alive) are the kosher kinds. Those kinds that didn't have fins or scales aren't kosher kinds (Deuteronomy ch.14).
To be kosher, the fish would have to be a kosher type of fish; and the ingredients (fish, chips, peas) would have to be cooked in kosher pots and pans.
What happened to Quincy Maid Potato Chip company located in Quincy Il?
My father worked for this company from the 1960s until around 2000 as a delivery driver. He was there pretty much the whole lifecycle of the company. It was owned by the Ostermueller family, specifically George Ostermueller, for most of this time. His son, Jim, didn't ever seem to have much interest in this goldmine that bought his Porsche, and eventually after his father's death (late 90s maybe), he ran it briefly and sold it to a few partners. It was down to three drivers when my dad retired from there. It went under around 2000. The building is still there but little else remains of this long time company.
Yes, if they were cooked in a vessel that was not used for non-kosher foods. Commercially produced chips require a valid kashrut certification on the packaging.
If left sitting out of the package long enough to become soft, if they are old to become stale, or if they become damp or soggy, chips will lost their chop.
