According to the government, a cup of cooked pasta is two servings, but according to the American Dietetic Association, it's three servings.

That;s nonsense, though. A cup of spaghetti weighs a lot more than a cup of elbow macaroni, and serving size should reasonably be measured in grams, noy cups.

What is the purpose of scalding milk for yeast rolls?

Scalding milk used in bread making was done because historically it was necessary to kill some of the bacteria present in milk before introducing the desired yeast, because the milk is then kept warm to encourage the growth of the yeast, and any undesirable micro-organisms would also grow in these conditions.

Modern pasteurized, sealed and refrigerated milk is less likely to require this treatment.

Scaling involves heating the milk until it is about to start boiling, then removing it from the heat.

When brewing beer how long can you wait before bottleing?

It depends on what your making. If there are a lot of fermentables you want to give the yeast time to do its job. I would say the minimum is a week but you could let the wort ferment for 2 to 3 weeks for a normal 5% alc/vol beer and it should be fine (Watch the bubbles from the yeast, when they die down and the surface of the wort is calm then the yeast is done working.) If your doing a stronger alc/vol beer then you will need to let the wort ferment longer and probably need a stronger yeast.

What is the difference between beer and ale?

Ale would be considered a subcategory of beer, actually. I'm going to ignore various legal definitions because they're silly and arbitrary.

Beer is an alcoholic beverage made from fermented grains. You can split beer into many subcategories, but two common ones are ale and lager. What differentiates these two is the temperature of fermentation- ales are fermented at roughly room temperature, and lagers are fermented at much lower temperatures.

What makes this difference is the yeast, and in fact we recognize two different species of yeast- ale yeast is saccharomyces cerevisiae, and lager yeast is saccharomyces pastorianus aka saccharomyces carlsbergensis.

Stout is often noted as separate from ale and lager, but if we're using temperature of fermentation as a basis for categorizing, it fits in ale category.

Nothing is black and white of course, so there are things which blur the lines. A style called California Common, best known by the beer Anchor Steam, is fermented with a lager yeast at warmer temperatures. The converse is a cream ale- an ale yeast fermented at low temperatures (though not always... shades of grey).

How many beers are in 16 gallons?

There are 128oz in 1gallon and 16gallons in 1 keg (128ozx16gallons=2,048oz) Now let's say you were serving 12oz cups of beer (2,048oz divided by 12oz= 170.7;12oz cups). Since we were using 12oz cups we move on to 12oz cans which come by the 24 can case ( 170.7;12oz cans divided by 24 cans in 1 case=7.1 24 can cases) That is you answer.
