The nutritional content information is provided on the side of the label of foods you purchase at the grocery store and is required by the FDA. The figures are based on a 2000 calorie diet. The serving size is provided on the label i.e. 2 crackers or 1 cup. Included on the label that is required by the FDA will provide consumers with the Total Fat, Saturated Fat, Trans Fat, Cholesterol, Sodium, Total Carbohydrate, Protein, different vitamins and other necessary information about food content. The ingredients are also listed on the label in order from highest quantity to lowest quantity.

How do you measure the amount of nutrients in food?

Using a gas chromatograph, chemists burn a small sample of a food (or a thoroughly homogenized, uniform sample). The flame emitted by the burning sample emits light of various frequencies, corresponding to the individual elements and compounds present in the sample. The spectrum of light is analyzed to determine the chemical content of the sample.

Additionally, foods will be analyzed chemically, as what we call 'vitamins and minerals' in nutritional terms, we call organic proteins and acids, and inorganic metallic compounds. Each of these will have its own chemical properties which can be detected in a laboratory environment.

Usually, however, the values for complicated, prepared food items are estimated by calculating them mathematically from known values for basic food items.

America (and the UK) in the early 1900's was seeing a rising epidemic of rickets, a vitamin D deficiency in children characterized by a softening of the bones. These softened bones would lose structural integrity and result in a "greenstick" fracture (like trying to break a green stick, one side would shred while the inside would bend.) They introduced Vitamin D to milk in the early 1920's, and as a result became a rare condition.

Vitamin D has been increasingly in the news (since around 2007) as a wonder vitamin, having many health benefits including the increased absorption of calcium. while this spurs vitamin sales, it is a fallacy that it helps the absorption of calcium. they DO coexist in the bones, however, if you were deficient in vitamin D, you'd see a softening of the bones, not a lack of calcium. Rickets in adults is known as Osteomalacia. I contest that if the population was in fact deficient in vitamin D, our ever-alert media would have alerted us to the rising epidemic of osteomalacia and rickets. There is no epidemic, proving that the current vitamin D deficiency is all about marketing, and not about health.

Should the use of any anti-acid be restricted in people that have low sodium diets?

Yes. Some antacids contain sodium. Check the label carefully, and preferably speak to a doctor, nutritionist or pharmacist.

Why is the ANDI score of jicama root 75 and the ANDI score of an egg is only 27?

An Aggregate Nutrient Density Index (ANDI) score is assigned to foods based on the nutrients they contain per calorie. ANDI scores are calculated by evaluating an extensive range of micronutrients, including vitamins, minerals, phytochemicals and antioxidant capacities. Specifically, they analyze Calcium, Carotenoids (Beta Carotene, Alpha Carotene, Lutein, Lycopene, and Zeaxanthin), Fiber, Folate, Glucosinolates, Iron, Magnesium, Niacin, Selenium, Vitamin B1 (Thiamin) Vitamin B2 (Riboflavin), Vitamin B6, Vitamin B12, Vitamin C, Vitamin E, Zinc, plus ORAC score X 2 (Oxygen Radical Absorbance Capacity is a method of measuring the antioxidant or radical scavenging capacity of foods).

Jicama root contains nearly three times the amount of these micronutrients per calorie than eggs do.

Also, Jicama root contains no fat, which means it is far lower in calories than an egg, but also does not provide the healthy benefits of Omega 3 fats contained in eggs. This is the primary weakness of the ANDI score.

What is the difference in measurements of mg and mcg is pills?

Mcg (micrograms) are 1000 times smaller than mg (milligrams). For example, a drug that has a strength of .075 mg is equivalent to 75 mcg. Many drugs are measured in mg, but some are in mcg. Always be aware of what you are taking - make sure you have been given the correct strength prescribed by the doctor or that the doctor wrote down the correct strength on the prescription.
