Botulism has absolutely nothing to do with why food left overnight should or should not be eaten. Clostridium Botulinum is an anaerobic organism. It grows where NO oxygen is present. This happens in poorly canned foods NOT food left on a counter or stove top. There are OTHER bacteria that grow in the presence of oxygen that can cause food poisoning. Very hot food should NOT be IMMEDIATELY refrigerated. Rapid cooling of the outside of the food can leave a "hot pocket" in the center where the offending bacteria can happily grow.
