End of the summer Aug-Sep is best. The crabs grow throughout the summer and are largest at this time. Do not put them in water because they will suffocate after they use up all of the oxygen from the water. Crabs breathe oxygen via water just like fish do. I haven eaten plenty of small trout cooked over a campfire, and ate the head, gills, and bodies. With larger fish, it is probably well to remove the gills along with their guts so as not to disgust people.
