Breaking someone's nose can certainly be termed as common assault. Self defense would be a defense to that charge. The jury would decide if self defense was justified. You should certainly consult an attorney.
What is the difference between a blood gauge knife and a regular knife?
I think you may mean a knife with a blood groove, as I am not familiar with anything called a blood gage knife. A blood groove is the colloquial name for the hollowed out strip on some knives. You can see it on the KA-BAR USMC fighting knife, for instance. The proper term for that strip is a fuller. Some people call it a blood groove because they think it is to help drain blood away from the tip of the knife when it is used in combat. Really, a fuller just takes some weight away from a heavy knife without reducing the strength of the blade.
How do you grab testicles in self defense?
Actually, this is a very good question. All women know how delicate the testicles are, and that squeezing them will render a man helpless with agony. The thing is though, unlike all other methods of Self-defence, it is virtually impossible to practice! Normal love-play doesn't prepare you for grabbing them quickly in a desperate situation, and your partner is obviously not going to let you practice squeezing his nuts!
I remember years ago reading a book for women on self-defence where the writer advised women to place two golf balls (I think two squash balls would be more suitable!!) in a sock, knot it, and tie it to a door handle. You can then perfect the action of grabbing, yanking downwards hard, and squeezing the life out of them! Until they let women practice on convicted rapists, I can't think of a better way to practise this.
Don't forget, by the way, that grabbing and squeezing just one testicle will work just as well (some say that this is even more effective than trying to hold and squeeze both organs), and is considerably easier to do.

What do you do if you get pepper spray on your lips?
If you get pepper spray on your lips, it will feel like like your lips are burning. Wash your lips well, but gently, and then wipe gently with milk on a wash cloth or hold the wash cloth to your lips. The milk will help to "neutralize" the effect. An even better remedy if you have them on hand is banana, just smear some on your lips and wipe off when the burning stops, it works quickly and well when your mouth or lips are burning from the capsaicin in the chile.

What are New Mexico's self defense laws?
Section 30-2-7A NMSA 1978 provides that a homicide is justifiable when committed in the necessary defense of property. The New Mexico courts have consistently held, not always referring to the statute, that one cannot defend his property, other than his habitation, from a mere trespass to the extent of killing the aggressor. The answer to this depends on your own circumstances.
If you're out of the water (in a boat, on a pier, etc.) you can use a projectile weapon such as a gun or harpoon, or even an electrical weapon such as a taser.
If you're fishing, reeling the shark in and keeping it out of the water will kill it in a matter of minutes.
If you're in the water, your options are far more limited, as this is the shark's home territory. You'd need a projectile or electrical weapon capable of operating underwater, as it's unlikely you'd be able to kick or punch the shark hard enough to deter its attack, much less kill it.
I have known several fishermen who carry pistols on their boats to shoot dolphins and sharks. If you are in the water as a swimmer, keep calm and slowly swim toward shore, calling for help if possible. As divers we are trained to go deeper if a shark should be heading your way and allow the animal to pass. Spear fishers know to leave their caught fish on a leader floating from a Downey or bleach bottle away from their bodies to not have to deal with the animals. Sharks have no bones and their bodies are surprisingly vulnerable. Dolphins know to ram them in their sides rupturing vital organs and killing the sharks quite effectively.
