We recommend using poultry and ground beef within 2 days of purchase, regardless of the date on the package. After this they can spoil. If the product looks ok and smells ok it is fine to use. If it smells bad or has a sticky, slimy feel it has spoiled and you should not use it.

A sulfur smell is definitely a sign of spoilage.

the outside of a medium well steak is very cooked. i would not use the word dangerous so no real need to worry may not taste great. if it were ground meat e coli will be a real issue. Don't eat. when it comes to any beef type steak cook to an internal temp of 140 f and u should be fine.

Generally speaking it should be safe as long as it wasn't contaminated with anything else, was properly refrigerated and still smells fine. If you are going to cook the meat it should be fine. Maybe be careful of consuming the meat raw.

instead I would respectfully submit drying as in parched corn,freezing as practiced by the inuits, salting as in salt pork.
