Actually, no. A red eared slider does NOT grow to their environment. If you feed it, it will grow. If not it will, obviously not grow then die. But there is no way to tell how old a RES is unless you hatched it or know who hatched it. It does not matter how big it is. Some owners over feed or under feed their turtles so there is no way determining it by size either.

The shell of a tortoise is similar to the human rib cage. To be precise, the human rib cage has spaces between them which seperates 1 rib from the other. Hence if you ever tap hard on the shell of a tortoise a few times, you will see immediate movement in the form of the tortoise trying to run away from you. Hence if the shell of the Tortoise breaks it results in immediate death of the tortoise . Hence one should never try and remove the shell of the tortoise. Incase the shell cracks , immediately take your tortoise to a pet doc. Also bandage the crack like you would to a human wound. Ensure that the bandage is firm so as to hold the shell together.

Its like asking why cheerleaders stack on top of each other. They do it for fun and entertainment. So do the turtles. Then again it depends on the number,, two or three turtles could mean something else. Just look into it if they are your turtles stacking on top of each other.
