On American word processors, you'll need to download a plugin (on windows, it's an IME - Input Method Editor) for the Japanese language. This allows you to type in Japanese. This is accomplished by using the western alphabet to type in Romaji, which is then converted to kana and from there into Kanji, when applicable.

On Japanese keyboards, where the kana are on the keys as well as western characters, it's simply a matter of changing your input method. This is usually done through a change in options, depending on the operating system. From my experience, though, the more popular input method is simply using a QWERTY keyboard to input Japanese via Romaji.
