Basically, the labor used to cut up and debone and skin a piece of meat is expensive, hence less processing = less expensive, even taking the weight of skin and bones into account. Also, breast meat is more expensive than dark meat, due to market demand, thus legs/thighs/drums are less expensive than breasts.
For the least expensive chicken, buy and roast a whole chicken, save the bones in the freezer until you have a few chickens' worth, and use to make stock. That way you pay the least possible for the chicken meat itself, and you can get some use out of the bones.
Chickens would sit on as many eggs as possible to keep them warm to help them grow. You don't have to put eggs back after they are laid if you want to use them for cooking. If you would like them to hatch, let the chicken keep them safe, or perhaps put them in an incubator, but research that first.

If the litter is warm and damp it takes three days to develop and when eaten by other birds while they feed, go on to infect the flock.
Coccidiosis is seldom seen in birds under three weeks old nor in birds older than three years.
The signs of an outbreak include birds that are pale, droopy, tend to huddle as if cold, consume less food and water than usual. They have diarrhea and often become emaciated and dehydrated. Laying hens with Coccidiosis will drop egg production

2 tsp - Garam masala (cumin, coriander, bay leaf, mace, cardamom, clove, cinnamon)
1/2 tsp - white pepper
1/2 tsp - black pepper
2-3 tsp - salt
2 cups of flour
You could probably leave out the hyssop or marjoram if you want to match the 11 herbs exactly.
Double the spices if you want a stronger flavor.

I don't think it's a good idea. Scratch is made for the digestion of poultry, which is vastly different than the complicated gut of a horse. I'm all for giving my horses treats, but always apples, carrots or horse cookies made for horses. I would advise to leave the scratch to the chickens.
