What to do if recipe calls for 3 eggs and 1 yolk and do not have the yolk?
Normally if you have 3 eggs you will have a yolk (it's the yellow part of the egg). However if you threw that part out and have no more or cannot get more then theres not much you can do other than try the recipe without the yolk
What was used in earlier days instead of UHT?
I am assuming you are referring to Ultra High Temperature processing. In earlier days nothing was used, it was just basic sterilization. Most of the time food wasn't even packaged, it did not come in packets or tins. Fruit and vegetables were fresh, milk was fresh, and the shelf life for such products was not very long because they did not have the use of additives and preservatives. When foods were starting to be packaged, for example in jars, the jars were heated so that they were steril, the food was placed in the jar, and then a small layer of wax was put on top to stop the food from oxidizing, a lid was then placed on top.
Can you use apple sauce in a recipe instead of milk?
No.
Well, it's not like it'll make the finished meal explode or anything, but the result will be a lot different than if you've used milk.

no. sadly u can't. the reason why is they both have different tastes. the cocoa powder is bland and the hot chocolate powder tastes like hot cocoa. and hot cocoa powder is commonly more used for that sweet brown liquid u drink, more formorally known as hot cocoa.

No. Lemon zest is the outer skin (the yellow part) of a lemon. Lemon pepper is a mixture of dried granulated lemon zest and black pepper.
