Where in Atlanta can you buy Kangaroo Meat?
Eating kangaroo is not illegal in the US as previously posted.
Kangaroo is a meat eaten in many places all over the world. It is a red meat like beef and is very high in protein but low in fat making it one of the better red meat choices.
In Altlanta I believe you can get it in Star Provissions, Altanta Farmers Market and Morningside Farmers Market.
Kangaroo is most commonly found in the form of steaks, but can also be found as burgers.
It is best cooked using quick methods such as pan frying, grilling or on the BBQ.
Further information and correction:
The only thing illegal about kangaroos in the US or anywhere else is the keeping of them as pets. Anyone who sells kangaroos or wallabies overseas is, in effect, flouting Australian law by exploiting them for commercial purposes.
Note that kangaroo meat is NOT a farmed meat in Australia, or anywhere else. Australian kangaroo meat is harvested from wild populations by licensed hunters. The animals are currently not farmed (as of 2014) although there has been some investigation into the feasibility of farming them. Kangaroo harvesters must have a licence and pass a Government approved course where they are given instruction in laws controlling kangaroo harvesting, meat hygiene and animal welfare.

Most people just find it easiest to roll them between their hands which is what makes them round. The ball shape also makes it easier to roll around in a pan to brown them.
Meatballs don't need to be round. You can make them any shape you want. Other shapes will just take more trouble to shape and will have to be manually turned in the pan while browning. Make some in the shape of mini hot dogs or try rolling out the meat mixture flat and making shapes with a small cookie cutter or canape cutter or cut triangles, squares and rectangles.
Meat chopped fine and highly seasoned, either served up alone, or used as a stuffing or in combination with other ingredients in pies or pastries.
Pickled meat is meat that has been soaked in a vinegar solution long enough to preserve it and give it a pickled taste.

Yes, they do better in cooler climates, but can be kept in warmer ones if the conditions are right.
Meat emulsion is a two phase system, with the dispersed phase consisting of either solid or liquid fat particles and the continuous phase being the water containing salts and dissolved, gelled and suspendedproteins. Thus they can be classified as oil-in-water emulsion. Meat emulsion is not a true emulsion since the two phases involved are not liquids and the fat droplets in a commercial emulsion are larger than 50 m in diameter and thus do not conform to one of the requirement of a classical emulsion. The continuous phase mainly consists of water, water soluble proteins and salt soluble proteins. The dispersed phase or discontinuous phase consists of fat droplets.
The water soluble proteins are sarcoplasmic proteins such as myoglobin and other pigments, salt soluble proteins are myofibrillar proteins such as myosin, actin, and actinins.
