The ancient Egyptians believed that when someone died, their soul left their body. The soul would then return and be reunited with the body after it was buried. However, the soul needed to be able to find and recognize the body in order to live forever. This was the reason for its preservation.

They were going to make a third movie but Brandon fraser refused to even when they offered him close to 3 million dollors. But in those two movies the cast stayed the same, and the scorpion king was made to give a bit of history for the second mummy movie but its a story all in itself and really has nothing to do with either of the mummy movies.
And if you are counting the cartoon as a third movie then many actors don't do voice work so that's probably why.
