None. All animals went in by two by two on the ark. That is how we have the animals we do today. All of the animals on the ark were boy and girl. They had children, their children had children and so on. So, if it did not go on the ark, it wasn't an animal at the time. Maybe, something like a Zebroid* didn't go on the ark, but a zebra and horse hadn't mated yet. So the is all animals went on the ark.

Possibly you are thinking of the 'clean' animals which went in by sevens. There have been various interpretations of this. The most likely would seem to mean three pairs and some have suggested the seventh was for a thanksgiving sacrifice once Noah and his family left the ark (or possibly for meat or both). Thus, this seventh animal was the 'odd one out' and would have been 'unpaired.'
Obviously, as some think, if it was seven pairs, then all these would have been in pairs with none left out.
Thus, these animals, which also frequently overlap with the domesticated animals which were to be useful to man post flood, were needed in greater numbers and so more were taken, however you interpret it.
In line with the above there would have been many animals which did not then exist until they diversified post-flood under the selection pressures of the radically altered environment. These animals were only figuratively on the ark in terms of the gene pool of their ancestors.

This question confuses faith with science. The Bible says that Noah's Flood occurred only around 1000 years after creation and, with the very low fertility portrayed in the Bible (for example, Methuselah supposedly only had his first son at the age of 187) there could not have been millions of people, let alone billions of people, at the time of the biblical Flood.

We are slowly beginning to find the fossils of early humans, but only where the bodies remain in places that permit fossilisation - most early humans were either eaten by wild animals or their bodies have decomposed.

Disregarding the question as to whether the Noah story actually took place, if Noah's Ark was made out of wood, pitch, and tar as the Bible records and it landed on Mount Ararat (in eastern Turkey near the Armenian border), it would have rotted by this point in history. Wood exposed on the top of a mountain would not last more than 100 years do to the moisture of the rain and numerous bacterias that feed on wood. It has been a few thousand years.

What is the difference between old and new covenant?
God made more than two covenants with Israel, but the one covenant known as the "old covenant " was the one that was made with Israel at Mt Sinai known to most people as the Law of Moses. In this covenant the people were given Ten Commandments, which were broken down into smaller parcels to cover each commandment thoroughly. This law was given to the people to help them live up to God's standards by thoroughly showing them what sin really was. It was an impossibility to keep this law completely and animal sacrifices were given to make atonement to cover their sins. There were also feast days that were give to the people to observe throughout the year. Circumcision was also a big part of this Old Covenant. The law could not really save a person, but could lead people to faith in God if they really desired that.

Also we do not have to sacrifice animals to cover our sin as Jesus' shed blood completely did away with our sin and that is realized when we accept Him as our Lord and Savior. If a person does not come to Jesus Christ the New Testament tells us that, that person will spend an eternity in hell.
