What are some ways to keep cheese dip like salsa con queso from hardening while being eaten?

Eat faster? Actually, if you consider that you've used heat to liquefy a material that is normally a soft solid, two approaches quickly come to mind; first, you can try to keep the heat on by serving in a heated container (a purist approach), or second, you can add a second method of liquification (usually the commercial approach) such as adding a light vegetable oil in the minimum necessary amount and blending well. The amount of oil added determines how well it stays pleasantly goopy. Too much oil... unpleasantly goopy. Even though water or milk might also work, usually the best resulting texture is less appealing than a botched oil infusion

Why are there so many types of french cheeses?

West Country Farmhouse Cheddar was originally made in Cheddar, in Somerset. Cheddar cheese made there is still entitled to use that name, as well as Cheddar made in Cornwall, Devon and Dorset.

The name West Country Farmhouse Cheddar is protected and cannot be applied to cheeses from outside these four English counties.

Cheddar-style cheeses are made in many parts of the world and range widely in quality and similarity to the original Cheddar. Price is frequently a fair indication of the quality of Cheddar imitations, as it is with cheeses called Parmesan, Swiss and Dutch, and many more. However, as with other imitations, some Cheddars produced are a disgrace to the name! Processed cheese bears no resemblance whatever to real Cheddar, nor - in the opinion of some - to any cheese at all.

It is possible to buy excellent Cheddar-style cheese, and the only way to be sure of its quality is to taste it. Every good delicatessen or dairy shop will offer pieces of cheese to be tasted and give advice on the style and use of the cheese.

In many parts of England rich fruit cake, or traditional apple pie, is served with wedges of good cheese, Cheddar or other semi-hard traditional styles: a delicious finish to a meal!

Can you preserve large quantities of cheese by wetting a thin kitchen towel with vinegar squeeze it out then wrap around entire log then wrap in paper towels then seal in plastic?

Vinegar is not necessary or, as far as I know, useful in preserving cheese. You can easily preserve your log of cheese by sealing it in plastic and then storing it in your refrigerator. Any cheese log which is small enough that you can wrap a kitchen towel around it, is also small enough that it will fit in your refrigerator. It is perfectly normal to refrigerate cheese. It works perfectly.

Bear in mind that although vinegar is often used to preserve vegetables (and vegetables preserved in vinegar become pickled) vinegar imparts a sour flavor, which would not go well with the flavor of cheese. Pickled cheese is not a promising idea.

Does cheddar cheese grow mold faster than white cheese grows mold?

It depends on the brand/type of cheddar cheese and white cheese. In many cases cheese is intentionally aged for better taste. A lot of the cheese you buy these days is loaded with preservatives, despite the fact that cheese has an astounding shelf life. The rate at which something grows mold also has a lot to do with the conditions it is under, as well.
