absolutely, i have 1972 nova and did the, the only problem is you will have to hammer the fire wall back a little where the distributor will go and find a smaller diameter air cleaner because the old one will no longer fit.
If the car came with a points-type distributor, it will have a resistance wire feeding the hot side of the coil. You would want to remove the resistance wire and substitute a copper wire to provide full voltage to the HEI.

Operating temp is control by the thermostat. They range from 160 deg. to 195 deg. they force the engine to at least be that temp. The engine itself can reach as high as 210 deg. on it's own over even higher when working hard. Just normal running with a good 190 thermostat should run around 200 deg.
