What is an Eiffel tower 1889 medal worth?
The 1889 medallions were given (or sold?) to visitors who ascended the tower during the Exposition Universelle . This was the Eiffel Tower's inaugural year and later souvenir medallions look very different from this one. Visitors were not allowed past the second stage of the tower during the World's Fair so the "ascension au sommet" refers to this.
I believe the medallion is worth $40 to $100 depending on condition. I just bought one in excellent shape for $65 and consider it a good bargain. I have seen the medallion for sale with a box that looks to be original. As a collector I would pay up to 50% more if it came in an original souvenir box.

What does Guillaume Apollinaire's Eiffel Tower translate as in English?
"Salut monde dont je suis la langue éloquente que sa bouche O Paris tire et tirera toujours aux allemands."
Greetings world, I am the eloquent tongue which pokes from your mouth, O Paris, to forever poke at the Germans.
I was looking for this translation and ended up translating it myself.
I borrowed from Claudia Habergham's translation, which made excellent use of the English word "poke" in a very tricky situation. The poem can be read as a tongue in cheek or glib joke or as a defiant provocation to the Germans. Ironically, the German army marched into Paris 25 or so years after he wrote this poem.
See Claudia's English translation of the calligram poem at Stephen Spender's Trust.

How did the restaurant 'Fuddruckers' get its name?
I don't know the origin of the name, but here is the early history: "Fuddruckers was created in 1980 to fulfill Phil Romano's personal quest for the perfect hamburger in San Antonio, Texas. His first restaurant was built on a warehouse model. It centered on the production of over-size burgers of 100% beef ground fresh daily, and in full view of patrons at the in-restaurant butcher shop. Customers could also observe the baking of buns, as well as a variety of desserts, then create their own burgers by selecting condiments and fresh produce from a fixings bar amply supplied with the finest produce, sauces and other burger "accoutrements" available." Fuddruckers' parent company is Magic Restaurants LP. Owners Michael Cannon and Bryce King bought the company in 1998, profit has soared by about 300 percent since then.
