The saddle is on the bridge.
One end of a guitar string is wrapped round a post (which allows you to vary the tension, and so the pitch of the open string). This is on the head of the guitar. The other end is fixed to the body in various ways. The string is held up off the fretboard and body by a bridge. Where each string crosses the bridge, it doesn't make contact with the bridge itself - it touches a saddle which provides a better contact surface.
