What of lager or stout beer is healthier?
You have to define healthy. There are alcohol calories, carb calories and the effects of alcohol to consider. The two kinds of beer are actually ale and lager, not stout and lager. However since you mention stout, which is a kind of ale, I will say that Guinness draft (either on tap or in the can, but not the Extra Stout in the bottle) has in the past been recommended by doctors in England because it's fairly low in alcohol and calories for a beer with that much flavor. Of course, that's England. They see things differently.
If you're not into flavor, you could say that those bland super-light beers, 55, 64, etc, are less unhealthy than other beers. I wouldn't say that any beer is the same as consuming, say, whole-bran cereal. Life just isn't that perfect.

Can you make beer without barley malt?
Maltose is the name for the sugars collected from grains (usually malted barley) and is a fundamental ingredient in beer. Maltose is also known as malt sugar or malt extract.
Obtaining the maltose from the grains is done by the procedure called Mashing. If you purchase a homebrew kit or malt extract (in liquid or dried form), the mashing has already been done for you. The collected sugars (maltose) from the grains are dehydrated into either a syrup or a powder for you to add the beer you are brewing at home. When you add liquid or dry malt extract to your brew (or 'wort' in brewing terminology), or if you create a wort by adding water to the canned brew kit you bought then you are using maltose to make your beer.
You'll probably find that your beer is a bit more harsh tasting. Not much difference at all really. You'll also find that the vast majority of that stuff falls to the bottom of the fermenter very quickly, so it's in contact with the beer for a very short time. In short, don't worry about it. in a 5 gallon batch it won't cause you much of a problem at all.
