Generally speaking, you have to remove various dashboard panels in order to gain access to the bulb(s) that need to be replaced. Which panels, and how to remove them, depend on which specific lamp has failed. Dashboards have dozens of lamps in them -- some for illumination (so you can see a gauge or label at night), some as indicators ("on", "fasten seatbelts", etc.).
For example, in my 2001 Forrester, the illumination lamps in the HVAC (heat/vent/air conditioning) console failed. During the day, this did not matter, but at night, I had to feel for the knobs to tell what they were set at. I discovered that the HVAC console was illuminated by two lamps (distributed across the entire HVAC console face by a series of clear plastic light pipes). Replacing the lamps themselves is a simple matter of pulling the bulbs from the lamp-holder sockets, and inserting new ones. However, to gain access to the lamp-holder sockets, I had to:
Re-installation is basically just reverse of removal.
As you can see, this task is made much harder by all the steps you have to do to gain access to the bulbs. None of it is actually all that hard as far as techniques go -- it is mostly just screws and snaps. The trick is knowing which screws and covers to remove, and in what order. I bought a Service Manual for my Forester to make it easier for me.
The only reason I even bothered replacing the lamps was that I had to tear the dashboard apart for something else anyway. (The HVAC blower switch failed.)

The smell comes from the new clutch and usually because you are riding it, or slipping it. Being a new clutch it reacts to almost any pressure. Stop riding or slipping it and this will stop.

If it is a cable clutch, change the cable too. You will kick yourself later if you do not replace all the components at this time. Also, make sure the flywheel is resurfaced professionally, not just a brillo pad on a drill. Pilot bearing has to be replaced too.

Easy one. I bought my replacement stereo from Crutchfield, who also supplies wiring harnesses for each individual car, First, remove screws from console and shifter arm (be careful) remove carefully console and center trim and set aside. Remove bezel (cover) from around radio by 2 screws under bezel. Remove bezel to expose radio assembly. 4 screws hold in radio and storage compartment. (unhook battery early) Remove 4 screws and radio assembly will slide out easily. Change out stereo (lots of mounting holes to choose from) by removing antenna lead and wiring harness plug. Attach wiring harness plug from crutchfield (Easy, solder or tape white wire to white wire, orange to orange, etc...) Plug in harness end to harness end, and re-install in reverse order. No botched wires, jerry-rigged connections, and using factory harness enables speaker setup and looks like it was built that way. total cost; 130.00 plus your time. Crutchfield supplies everything, and has several choices for stereos. Easy and professional. I have used same stereo on 3 cars now, just needed different wiring harnesses. Enjoy and don't forget to reconnect battery.

If it is an automatic trans, then the dipstick is on the drivers side, buried under/behind the rubber heater hoses, almost under the master brake cylinder.

Easy if you have an engine hoist and experience doing it. The most annoying/difficult and time consuming part is just unplugging everything. Oxygen sensor, throttle position sensor, coolant temperature sensor, etc... all need to be unplugged, then plugged back into the correct place on the new engine. Every time I've done an engine swap, there will be one plug that didn't get plugged in, or plugged into the wrong place, and then you have a really fun time finding what you did wrong. I recommend you buy a service manual, and make friends with someone who's done engine swaps before.

My answer may apply to you. My girlfriend has a 99 subaru legacy and the pwr steering fluid was leaking on the garage floor. We bought a rebuild kit for $45. from the dealer and I tried to repair it. I went to the public library and they had Chiltons manual online (free of coarse) that I was able to down load and copy on the step by step process on how to take off the whole Pwr Steering unit from the car so i could "rebuild" it. The site has instruction on how to bleed the system when you're done. Once the unit is out of the car you can look the unit over to see where your leak is happening. You didn't share in your question what problem leads you to believe you need to "check" your power steering so I'm not sure what you need to do. You can respond to this site I guess if you need more info. I did find the dealer wants about $360 for a new pump. I went to a rebuild site and found where I can have a rebuilt arrive at our house for $125. Installing is pretty easy. Rebuilding with the parts kit left me with some questions as I didn't feel comfortable taking some parts out for fear of not being able to get some back in just right. Small pins and such. Follow the lower rad hose from the rad to the engine, the thermostat is located under the thermostat housing on the engine end (2X10mm head bolts). Notes: 1) if these bolts have not moved in a while it is likely best to spray them with oil for a bit, they are steel bolts in an alumnium housing located in an area almost impossable to get a drill to, so be careful. 2) using an aftermarket thermostat can give "mixed" results, the best choice is a Subaru OEM thermostat and gasket. 3) use a bit of grease on the bolts when replacing them for "next time".

The way the EJ engines are designed, and the engine compartment of the STI itself, is specifically suited to fit one turbo. But, anything is possible with custom fabrication. Doing something like twin turboing an STI though would cost too much money, you're looking at over $20k.
It would be a much better choice to simply put a larger turbo on. Less money, more simplicity, more reliable, easier to work with, probably faster as well.

The headlights are sealed units, unfortunately they do cloud over a bit with age. Try a cut and polish on the outside of the lens to clean them up a bit, but you would have to go to a plastic welder or similar to get them to remove the housing, and even then, cleaning them may not remove the cloudy effect.
