As mentioned above, the casein in dairy products helps to neutralize the effect and also the fats (especially the higher fat dairy products like premium ice cream) mix with the oils from the chile and dilute the effect. Alcohol might work to dissolve the oils a bit, but the burn of the alcohol itself adds to the unpleasant sensations rather than removing them (but enough of it and you may not care any more). Banana is a tried and true "antidote" for people who have bitten off more than they can chew. We have tested it and found it to be better than the other "remedies" tested at the same time with the same chiles. Why it works is not yet clear, but it does...just try it next time, it is almost instant relief.

The better the steal pot, the less risk of burning your sauce. You may also use enamel or glass - but stainless steel is still your best option. Another benefit to these pots is that you may cover your sauce, and place in your refrigerator for up to 12 days before freezing. NEVER use an Aluminum pot as the acid in the tomatoes breakdown the aluminum, especially if you store the sauce in it. Same concept as never cover anything acidic (i.e. lemons, tomatoes, vinegar base, limes, etc), as the acid eats away at the aluminum foil

It is mold and you shouldn't eat it. Mold can penetrate the food source so even if you remove the upper layer, your product is still contaminated. When you find anything growing on food, you should generally consider it to be spoiled and discard it. There are only a couple of exceptions (mold on cheese can often be cut off, for example) but with tomato sauce, it's not usable after mold begins to grow.
