Why does self-raising flour leave a bitter taste in your baking?

Baking powder is a leavening agent or rising agent. Some others are baking soda, yeast, beaten egg whites and other things. With out it your cookies will be thin, flat, hard and heavy, instead of light and/or crunchy. Baking powder is relatively slow acting, especially when compared to baking soda (sodium bicarbonate). Baking powder is a mixture of baking soda, a base, and cream of tartar, an acid, when mixed with a liquid the two combine and a gas, carbon dioxide,CO2, is released. The tiny bubbles make the dough rise. The liquid is usually added last thing before baking so the bubbles don't just dissipate into the air. The cookies go into a hot oven so the dough begins to set up and the bubbles separate the small particles of firm dough instead of just being baked as bubbles into the otherwise hard cookie.

To much oil in cake batter?

Too much oil will make the cake batter greasy and slippery and too thin / runny. It will cause large probelms while baking, as the cake may not set up before it burns from being baked for too long. To counteract this, you can try to skim some of the excess oil out with a spoon or mop it up with a paper towel. You can also add some more dry ingreients, like flour or cocoa powder. Also try to add more amounts of the other ingredients to even it out.

What the different between conventional cooking and micro-bake cooking?

Conventional oven cooking is just that. Cooking something, or baking it rather, in a conventional oven. Micro-baking is where one takes a food item, frozen pizza for example, and nukes it in the microwave or a period of time before putting it in the conventional oven to finish. If done properly you get the same quality as conventional oven cooking in less time without the soggy results of only cooking in the microwave.

What smells most in a bakery?

Although it is actually surprisingly difficult to convey the sense of smell over the internet, I think I can safely answer, in a way that you will almost definitely understand, what bread actually smells like: Bread, of course, smells like bread, and although I fully understand that the medium of the internet may not be enough to stir those parts of the mind with which the comprehension of the chemicals in a loaf of bread, or in anything else that 'smells' for that matter, is dealt, I am afraid that this is the best answer that you, or anybody else, could possibly receive without actually going out and smelling the bread for themselves.

What is the easiest thing to bake?

An easy variation on the basic vanilla cake recipe

175g (6oz) margarine or

softened butter

175g (6oz) caster sugar

3 large eggs

150g (5oz) self-raising

flour, sifted

50g (1¾oz) of cocoa, sifted

1tsp baking powder

1tsp vanilla extract

pinch of salt

For simple chocolate icing

100g (3½oz) of dark chocolate 100g (3½oz) of chopped butter

1. Heat the oven to 180C (gas mark 4). Lightly grease an 18cm (7in) round cake tin with a little extra butter or margarine and cut a piece of greaseproof paper or non-stick baking parchment to fit the base of the tin.

2. Put all the ingredients in a large mixing bowl and beat with a wooden spoon or a hand-held mixer for 1 minute, or until just combined. It's important not to beat the batter too much just long enough to make it smooth.

3. Pour or spoon the mixture into the tin, smooth the top and bake on the middle shelf of the oven for about 45-50 minutes. The cake is cooked when it looks well risen and golden; the top should spring back when lightly touched with a fingertip. Another test is to insert a skewer into the centre of the cake - it should come out clean.

4. Let the cake sit in the tin for 5 minutes, then gently run a knife around the edge and turn the cake out onto a wire rack to cool.

5. For the icing, place the dark chocolate and chopped butter in a heatproof bowl and set over a saucepan of very hot water until melted. Cool for 15 minutes, then spread over the top of the cooled cake.

How much imitation vanilla to substitute for vanilla extract?

You should use the same amount as called for in the recipe.

According to Cooks Illustrated, imitation Vanilla has a *lot* more vanillin than real vanilla will have. Apparently, to be normal strength vanilla, you can only have so much vanilla.

There's double-strength vanilla, too, which is what I prefer to use.
