Let the roast stand at room temperature, uncovered. for 15 to 20 minutes to finish cooking. (The temperature should register between 150 and 155 degrees F.)

In a large pan I fry onions until they are transparent, and garlic (depending on how much you like it), salt and pepper. Then I add the chopped liver, and some more herbs like rosemary and thyme leaving it there to slow cook for 15 min.
When it's done, I add boiled potatoes chopped same size as the liver, slowly mixing the ingredients to have a unified flavor.
I serve it hot with tomato salad and red wine, specially Casillero del Diablo, Carmenere.

It's not a unit of measure. It's a kind of thing. In a recipe, lemon zest or orange zest is the thin outermost part of the rind. When grated into fine bits, it is used as flavoring.
In cooking, the zest is the thin outer peel of a citrus fruit, obtained by grating the peel of the fruit until one sees the white of the fruit. In a lemon, it's about a tablespoon. In an orange, it's about 3 tablespoon.
