These crackers are produced by a number of different companies. They are pleasant to eat, almost bland with a hint of sweetness, and are good with a cup of coffee, tea, or milk. On its website Goya lists them as a "four pack at $5.56." They do not say whether this includes shipping or whether shipping is extra. This is very much like the New England Biscuit in texture but is a bit sweeter.

This 7 oz package of Autentico Maria Cookies is a respectable substitute for the famous New England Biscuits or Goya Maria Cookies. They are a bit sweeter than the New England Biscuits. There is no indication as to who bakes them for ShopRite, but they are good. They are packaged in a round-plastic-covered roll. They sell for about $.79 to $.89 each.

STELLA D'ORO BREAKFAST TREATS

This "S"-shaped cookie is fairly well known, as it is one of a collection of delicious cookies created by the original Stella D'Oro Company, now owned by Lance, Inc. (Kraft Foods), after having been bought out by a number of different companies. The business was started in 1932 by an Italian immigrant named Joseph Kresvich at a West 237th Street bakery at the north end of Kingsbridge in the Bronx. The company went through many ups and downs in its history, but its products continue to be a sturdy resident of most supermarkets throughout the U.S. It is probably best known for its biscotti, which are delicious. However, the breakfast treats are the closest possible relation to the Milk Lunch that we all crave with our coffee, although it is sweeter.

It is a brand of canned or evaporated milk. My Mother used to name it in her recipe: Add 1 cup Sego--but we all knew it was the canned milk.

Why would you want to do that? What can you use instead of sherry in a recipe?

What is passata?

Passata is simply ripe raw tomatoes that have been pulverised and passed through a sieve -like a thick tomato juice - and then bottled. It's simply a convenience food for Italian cooks and serves as a base for sauces.

Here's my recipe. You will note that I cook this particular passata to soften and blend the flavours.

In a deep heavy pot:

Gently fry 3 cloves crushed garlic till colouring and then add 2 tins Italian tomatoes, 2 tablespoons tomato puree, 1 teaspoon smoked paprika, salt and pepper. Fresh basil is optional.

Cook this gently, stirring from time to time to blend, then pass it through a sieve and return to the pot to further reduce if necessary. Discard the residue in the sieve.

The passata may be used to dress pasta or polenta, on pizza bases, or in other pasta dishes or those requiring a tomato sauce.

You can freeze it or bottle it for later use.

When was granulated sugar first produced?

The discovery of sugarcane, from which sugar, as it is known today, is derived, dates back unknown thousands of years. It is thought to have originated in New Guinea, and was spread along routes to Southeast Asia and India.
