I am by no means a physician or fertility expert beyond the fact that I have undergone two cycles of IVF (both successful!) and so I've played the beta HCG game myself. I know that they like it to double every 48 hours but by no means does it have to. In my first pregnancy my doubling time was 3 days right at the day of my "missed period" and everything turned out fine.
Another issue here is what "day" you are in your pregnancy. Basically the lower the beta HCG the faster it will double. This is an obvious mathematical phenomenon, of course. Then, as the pregnancy progresses and your HCG levels are higher they will naturally take longer to double.

You will also not see a embryo since they are too small that early. The hormones take a few weeks to settle so a pregnancy test will show positive for a little while longer.
