The Vitamin C will probably get decreased due to the food it is processed by. An example of that is if you buy a serving of Large Fries from McDonalds and the Vitamin C is processed to a Small serving of Fries then the Vitamin C will decrease because the Vitamin C in the Large Fries were larger and when it processed into the Small Fries then it got decreased because the Small Fries had a lower percent of Vitamin C than the Large Fries did.

for an experiment I took a large potato just now, I sanded down one side of two pennies so that half was copper and half was zinc, I stuck these pennies deeply into the large potato then tested with a multimeter.
It produced 0.55v at 0.00mA
I'm sure if I had proper copper/zinc rods I might be able to produce better results, but it doesn't seem to be very promising in the mA area.
Is it ok to use bouillon while cooking potatoes or pasta - or is it a waste of bouillon?
I would say that using boullion for cooking pasta IS a waste since you're going to put sauce on the pasta anyway. However, using boullion for cooking potatoes (for mashing) makes sense. The boullion will flavor the potatoes while reducing the need for butter or margarine and possibly milk (you can use the boullion flavored water instead). Boullion is also useful in cooking rice. It gives the rice a nice flavor as opposed to water.
Do you boil the potatoes for mashed potatoes with or without the skins?

Actually, you can boil any potato with the skin on for mashed potatoes. Most of the vitamins and minerals are located just under the skin. If you peel the potato, there goes the good stuff. If you don't care for the skins either half peel the pots for less skins or use a ricer and the peels will remain in the ricer.
It will be awfully fiddly taking the peel off afterwards, especially if you havent a ricer, if you want to keep the skins on for cooking, why not bake first, then cool a little and then take off the skins. Personally, I have always taken off the peel, and mashed, you do not really lose much , and if mashed with olive oil, until smooth, absolutely smashing.
Is chicken that is left out thawing all night still good?
No it has been at room temperature too long and has probably started to spoil. Always thaw meat in the fridge not at room temperature so the food does not enter the danger zone.
