What meat is traditionally used in Irish Stews?

Lamb and potatoes are two of the staples. Of course the potato is the number one answer, but surprisingly enough (I'm half Irish) there are more foods from long ago right up to modern healthy eating in Ireland. Wild garlic, cabbage or curly kale and scallions. Irish Stew is at the top of the list always with potatoes; bacon, boiled pork sausage. In the more modern times fish is more often eaten such as prawns, oysters, salmon and cod, etc., Soda, wheaten breads and soda farls and blaa. Honey was always used. Of course the most famous meat was lamb, but also pork and beef as generations passed by. Porridge was made from nuts, berries, knotgrass and goosefoot in the earlier years. Dairy products such as milk and eggs and churned butter.

The best way is to add a peeled, halved raw potato. Do not add too soon, or it will cook through and turn to mush. also if you use any type of jar or canned products to soups or sauces; they are very high in salt content, so do not add any additional salt to your recipes.

How do you cook menudo soup?

1 Package 16 oz Fideo Pasta (Sold in the Ethnic isle)

4 Medium size tomatoes

3/4 cup of chopped onion

3 garlic cloves

1/4 cup of chicken bouillon

4 cups of water or chicken stock

4 tbs of vegetable oil

First step is to make the sauce for the fideo. Blend the tomatoes, 2 cloves of garlic and 1/4 of onion with two cups of water for a minute on medium speed and set it aside.

In a 4 quart pan turn the stove on medium temperature and pour the oil into the pan wait until the oil is hot and add 1/2 cup of the chopped onion. Cook the onion until translucent than add one garlic clove (chopped). Immediately add the fideo and start to brown it. Do not step away from the stove or stop stirring the fideo, since it will burn very easy. Once the fideo is browned add the sauce and the four cups of water. Let it come to a boil than add the 1/4 of chicken bouillon at this point cover the skillet and let it simmer for 15 minutes until the fideo is tender. If you do not want to make the tomato sauce, you may use one can of an 8 oz plain tomato sauce. You will need a total of 6 cups of water or chicken stock. You may serve the fideo with cheese or sour cream on the top and warm corn or flour tortillas on the side. On a side note, I like to add two raw eggs on the fideo right before it starts cooking for 15 minutes. The eggs cook and I have a meal with protein.

Can I cook an open can of soup on a stove?

As to the physics, it's possible to heat a can directly on a burner, but IT IS NOT RECOMMENDED! Grab a pan and put some water in it, then put the can in. Heat it with the water a la Mary Hartman, Mary Hartman. Burning the contents of a can when heating it directly on a burner is something that can be done with ridiculous ease. And, as stated, heating the can directly can cause an explosion. Enough said. Be smart about this one. The mess it may make is nothing compared to the injury it may cause. Use that big cerebral cortex to think this one through. Bon appétit!

How do you precook mushroom before using in soup?

Ingredients

  • 5 ounces fresh shiitake mushrooms
  • 5 ounces fresh portobello mushrooms
  • 5 ounces fresh cremini (or porcini) mushrooms
  • 1 tablespoon good olive oil
  • 1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided
  • 1 cup chopped yellow onion
  • 1 carrot, chopped
  • 1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups chopped leeks, white and light green parts (2 leeks)
  • 1/4 cup all-purpose flour
  • 1 cup dry white wine
  • 1 cup half-and-half
  • 1 cup heavy cream
  • 1/2 cup minced fresh flat-leaf parsley
Directions

Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if there are big, cut them into bite-sized pieces. Set aside.

To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water.

Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. Serve hot.

Do you cover pork chops when baking with cream of mushroom soup in the oven?

My favorite way of cooking pork chops in the oven is to place a cast iron skillet in the oven on about 450 degrees Fahrenheit. After the skillet and oven are very hot, add about two tablespoons of margarine. Don't use butter because it doesn't have the higher water content that margarine does, and it will burn when it gets that hot. Also, cooking oil just doesn't give it the same flavor, so I wouldn't use that, either. Place the pork chops in the hot margarine, turning them right after placing them in the skillet to coat both sides with the margarine (this will aid browning and flavor). Let them cook, uncovered, until the bottoms are brown. Then turn them over and let cook till the other side browns and the the chops are done. This method ensures the chops are nicely browned, yet fully cooked without drying out.

I prefer using the thick, boneless pork chops, but you can try it with the kind you prefer. Just be sure that, with which ever cut you use, you score the fat on the outer edges to keep the pork chops from curling as the fat shrinks.

How long to boil carcass for soup?

The time depends on the size of the pieces. Small pieces, around the size of a marble, can cook in 15 minutes or less. Quartered spuds may need to boil for 25 minutes or longer. If you want to test a small piece, smash it with a fork. It should not have a hard core.

If you put salt in the water, it will raise the boiling point and allow them to cook a bit quicker.
