To cook yam fries, you should heat 3/4 cup of vegetable oil. While the oil is heating, peel your yams, and cut them into rectangles, trying to imitate the shape of shoestring french fries. The oil is ready for frying onjce a drop of water dropped in the oil causes it to crackle. Place the yams in, and fry until they are crispy, about 12-15 minutes. Drain them on a plate covered with paper towels, and then season to taste. Either salt, or butter, sugar, and cinnamon.

What to subsitute dry sherry for when cooking?
Post By meggieliz8 (Guest Post) (10/02/2008) I found this on yahoo answers:
"I have a book called Substituting Ingredients by Becky Sue Epstein and Hilary Dole Klein. In that book they say that a good substitution for sherry is either an equal amount of Madeira or Port.
Another book I have called Food FAQs by Linda Resnik and Dee Brock says that you can use Madeira, Marsala, Port and Sherry interchangeably in equal amounts in a recipe. It also says that for a recipe that calls for 2 tablespoons of a heavy wine (one of those four listed above), you can substitute 1/2 cup dry red or white wine.
From http://www.gourmetsleuth.com/alcoholsubs... - a non-alcoholic substitution for sherry would be:
2 tablespoons sherry, substitute the following:
1 to 2 teaspoons vanilla extract or 2 tablespoons orange or pineapple juice.
To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water OR
1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup.
If you want general substitutions (not measured substitutions) for sherry, you can try: Apple cider; non-alcoholic vanilla extract; coffee; or coffee syrup."

What is blanching with oil or fryer?
Blanching with oil in a deep fryer involves putting food in hot oil for a few minutes to lightly cook it, and then removing it from the oil. For example, twice fried french fries are first blanched in a lower temperature oil (usually 325 degrees) for a few minutes to lightly cook them and soften them. Subsequently, they are fried a second time at a higher temperature, perhaps 350 - 375 degrees) a second time, which reheats them and gives them a very crispy exterior. The purpose of the two different fries is to give the french fries a soft, warm interior and a crispy crunchy exterior. (They're excellent).

Does an egg bounce after it has been soaked in vinegar for twenty-four hours?
Yes, after being soaked in vinegar for 24 hours, the eggshell would have dissolved, leaving behind a membrane that may cause the egg to bounce slightly if dropped from a low height. However, the egg may not bounce as much as a rubber ball due to its fragile nature.

Do hot dogs explode if you don't cut them?
No, hot dogs will not usually explode when cooked. Sometimes they will split open though.
However in a microwave cooker hot dogs (like many other foods) can explode if their "skin" is not pierced to let out the steam generated during cooking. But even here they don't need to be cut, just poke two or three holes in them.

Can you ruin a cake by looking at it?
Yes. Cake is a very delicate element, even more so than animal, vegetable or mineral. The gamma-rays from a person merely looking at a cake makes it go bad two days earlier. This means that not only can't you have your cake and eat it too, but you might not be able to have your cake unless you hurry. So, stop looking at the cake, eat the cake, and be hopeful it's not already gone. For lost cake or ruined cake you can call your local bakery for emergency service.
