Or, to keep it really simply but amazingly flavorful - I'm assuming you're cooking a savory dish here - just halve a chunk of fresh ginger vertically (no need to peel) and stir it in with other spices once the onions are almost cooked, along with a pinch of sugar. Let it cook with the onions for a while and discard it when the sauce or soup is nearly cooked and the ginger has done its job. Couldn't be easier. You could put in a whole chili, which will enhance the flavor of the ginger, and discard that when you feell your sauce has sufficient warmth or, even, heat.

I recently came across a cookbook from the 1850s. That cookbook is very interesting covering all types of pioneer cooking. One of the articles covers the preserving of shad, a type of fresh water fish. The recipe used for shad can be used for any fish.

The following recipe is taken directly from the cookbook.

"Clean the shad nicely, place them in layers with back down, and laid open so as the inside of the fish may be up. Sprinkle each fish plentifully with ground salt, and let them stand twenty four hours. This draws out all the blood. Wipe them all dry with clean napkins.

Place them in layers in a clean tub, with the backs down as before. For one hundred shad take half a lb. saltpetre, and 2 pounds of brown sugar. Strew plenty of rock salt over them with the saltpetre and sugar, there is no danger of putting on too much salt as they will only absorb a certain quantity."

As you can see, this is a very simple recipe. You will notice this recipe uses quite a bit of salt, I strongly recommend that everybody store at least 100 pounds of salt, if you intend to do any food preserving. Saltpeter or saltpetre is commonly known as potassium nitrate.

Put potatoes in large pot of boiling water and cook until firm, but not mushy (or you'll get mashed potatoes!). 2. While the potatoes are cooking, in a large skillet or saucepan cook the bacon until crispy - drain on plate with paper towels to absorb extra fat (reserve 1/4 cup of grease/fat for salad). 3. In the same skillet pour in your water, apple cider vinegar, white sugar, salt, pepper, mustard, flour and onions. Cook on medium/medium high until sauce reduces and thickens. 4. While sauce is cooking and potatoes are finishing, chop up fresh parsley. 5. Drain potatoes onced cooked and put into container big enough to hold all materials. 6. Pour the hot vinegar sauce over the potatoes and throw in your parsley. Stir carefully. Serve either warm or cold. Will keep for about 2+ weeks! Mix together

4 cups boiled, peeled, cooled, cubed Russset potatoes

1/2 cup green onions, finely chopped

4 hard boiled eggs, whites only, chopped

Dressing:

Mash the yolks of three of the hard boiled eggs

Mix egg yolks into 2/3 cup cultured sour cream

Stir in 2 tbsp. cider vinegar, 1 tsp. prepared mustard,

1/2 tsp celery seeds, 2 tbsp mayonnaise, and 1/3 cup

sweet pickle relish; salt and pepper to taste

Pour the dressing over the potato mixture and toss

lightly. Peel and boil potatos just like you would for mashed potatos. Mash. Add mayonnaise, mustard, salt, and pepper to taste and mix to smooth but stiff consistency with a whisk. Add chopped onion, pickle relish, and chopped boiled eggs to taste and mix. If you care to, add individual slices of boiled egg on top, as a garnish, before serving. This will likely be different from any potato salad you have ever eaten, but it's worth a try.
