Hydraulics is the use of fluids, usually oil or other hydraulic fluids, that are used under pressure to move a piston from the inside of a cylinder to the outside of the cylinder. If you attach this to a lever or tool, it can be used to cut, fold, crimp, move, punch an item or many other tasks. By reducing the pressure in the cylinder, the piston will retract back inside of the cylinder, thus retraction the tool or device it is attached to.

Preumatics does the same action or function by using air under pressure instead of using a fluid.

One way of doing this, although maybe not the easiest, would be to use a so-called embedded computer. There are a number of embedded computers made for hobbyists that are relatively inexpensive and easy to use. Although these computers cannot themselves control 12 volts DC, they can control transistors or relays which in turn can turn 12 volt DC on and off. Two examples of these computers are the Arduino and the computers made by Parallax.

That is a formidable project.

To control fingers, most likely you should use something like miniature linear motors. The position controls become more of a problem, since you would need to use microcontrollers, analog to digital converters and feedback loops to detect position.

It would be best if you didn't bite off such a big project until after you've learned some of the basics.

These machines then need to be fabricated, assembled and transported to the job site. Humans do all of which.

The only jobs that can be done by machines are those who never change. Machines can only be programmed to do one task. Therefore any job that requires moral judgment, the need to differentiate, or even more than one level of thought, cannot be done by any machine or robot.
