Why were carvels able to sail against the wind while other ships cannot?
Well, back then people used the traditional square sails. So when the Caravel was built they used triangular sails instead of the traditional square sails which made the ship able to sail against the wind.

How many people can you safety get on your hunter 260 sailboat?
The Hunter 260 Manual page 37B says the Maximum Loading is 8 people or 840 kg (including luggage) The normal displacement for this boat is about 5000lbs, with this many people you'll add at least another 1500lbs to the displacement. With this many people aboard it will be very crowded - half of them will be in the cabin and the boat will not perform well. I've had six aboard and it was a nightmare.
There isn't one single size for this class. A schooner is generally defined as a fore-and-aft rigged (as opposed to square rigged) sailing vessel of (minimum) two or more masts, having a foremast shorter than (or not longer than) the mainmast.
Schooners come in all conceivable lengths, but the largest ever built was the all steel Thomas W. Lawson(1902), seven masts, 475 feet length overall, displacing 13,860 long tons. Lawson was a commercial failure for many reasons, but she holds the distinction of having been the largest schooner and the largest pure sailing vessel (no engine) ever built.

How much do new sails usually cost for a 1971 27' Hunter?
There are several price points for sails, and depending on your budget and needs, they vary quite a bit.
A standard dacron mainsail and genoa for a Hunter 27 starts around $2,500.00 and goes up from there. These sails are great for everyday cruising, and when properly cared for they should last for several years. In fact, I have seen some dacron sails over 20 years old that are still in fair shape.
Racing sails are quite a bit more money. If racing sails are what you require, you would need to work consultant to determine the best solution for your racing needs. There are so many choices, it is dificult ti establish a base price without doing the research.

How did ladies get on and off sailing ships in the 19th century if anchored in a bay?
The way I heeard it, visitors to 19th centure sdailing ships would come alongside in a small boat, then sit in a bosun's chair (like an old-fashoned swing). A crew of sailors would pull on the tackle and hoist them aboard. What gives this the ring of truth is that visitors to ships are piped abord by a bosun with a pipe, while side boys stand at attention. Admiral Dan Gallery further maintained that the higher the rank of the visitor, the more likely they were to be fat--and therefore they would require more side boys to hoist them aboard. That's why more side boys are called for the higher the rank of the visitor to this day.
