A list of Catholic church associations of colors lists humility being among the ideas conveyed by red. Knighthood and Catholicism being closely linked, it is not surprising they share color symbolism.

I suppose the ideas on what color symbolizes humility has probably changed through history as I have also found mention of white and gray being the color of humility.

I suppose yes water can go off, after a very very long time. if its in a bottle it will look as if its ok but when you smell it, it almost smells like off milk.(its true). When its in a cup you can actually see that its off, you'll see the green staleness in it. like fungi.
