Assuming this is a first aid question, avoid putting anything on a burn from heat. DO NOT put butter or grease on the burn. It can be covered with a clean, dry dressing to protect it. There are spray products made with aloe vera and lidocaine that can be used for pain- but a LARGE burn should be seen by a doctor.

I find the easiest way is by weight, or by how easily it cuts when you chop it into smaller pieces. Dry wood is significantly lighter than green wood and chops much more easily. If you are still not sure, try throwing one log on the fire. If it causes a lot of smoke and you see sap fizzing and bubbling out of the ends, it is still green. :)

You ARE going to lose heat up the chimney. Couple of things you can do to keep SOME of it in the room. Got a set of doors for the fireplace? They need to be open while burning, but can be closed as fire goes out, keep from sucking warm air out of the room. There are heat exchangers that are metal tubes with a fan. Tubes heated by the fire, fan pushes air thru the tubes, out into the room. The "Heatilator" style fireplaces have a heat exchanger built in to the fireplace. The heat exchangers are not cheap, and are still not as efficient as a wood stove.
