As a former firefighter that inspected chimneys; wood stoves; etc., fireplaces have been around a very long time in all types of weather and temperatures. The best way to use a cold chimney is to heat it slowly with a small fire. Cold chimneys will crack when heated too quickly. This is extremely dangerous. First and most important, have the chimney and fireplace checked by a professional before each season every year. Fireplaces are not very heat efficient. When not in use they bring in the cold.

I find the easiest way is by weight, or by how easily it cuts when you chop it into smaller pieces. Dry wood is significantly lighter than green wood and chops much more easily. If you are still not sure, try throwing one log on the fire. If it causes a lot of smoke and you see sap fizzing and bubbling out of the ends, it is still green. :)
