What are ANDI scores?

ANDI stands for Aggregate Nutrient Density Index. An ANDI score is assigned to foods based on the nutrients they contain per calorie. It was invented by Dr. Joel Fuhrman, and described in his books Eat For Health and Eat Right America Nutritarian Handbook.

Each food is scored based on the equation H=N/C, which means that health is equal to the nutrients per calorie. Each ANDI score is based on a scale of 0-1,000, with 1,000 being the most nutrient dense and 0 being the least nutrient dense. ANDI scores are calculated by evaluating an extensive range of micronutrients, including vitamins, minerals, phytochemicals and antioxidant capacities. Specifically, they analyze Calcium, Carotenoids (Beta Carotene, Alpha Carotene, Lutein, Lycopene, and Zeaxanthin), Fiber, Folate, Glucosinolates, Iron, Magnesium, Niacin, Selenium, Vitamin B1 (Thiamin) Vitamin B2 (Riboflavin), Vitamin B6, Vitamin B12, Vitamin C, Vitamin E, Zinc, plus ORAC score X 2 (Oxygen Radical Absorbance Capacity is a method of measuring the antioxidant or radical scavenging capacity of foods).

Kale, mustard greens, collard greens, and watercress all receive a score of 1,000 using the H=N/C equation, while foods like meat, seafood, and dairy products receive scores below 50 and are not considered to be healthy. A nutrient dense diet, according to Dr. Fuhrman, can prevent or even reverse diseases, including obesity, diabetes, cardiovascular disease, and even cancer. The system has been adopted by Whole Foods Market grocery stores for certain items.

How many teaspoons of mustard powder are in a gram?

One gram of granulated sugar is about 1/4 teaspoon, so about four grams of sugar would be in a teaspoon.

Are potatoes fertilized with miracle-gro during the growing season okay to eat?

Yes, they are. I live in an area with good drainage, sandy soil, but almost NO organic material. I can't afford a truckload of compost, nor can my wife and I produce enough of our own compost from our kitchen and lawn clippings. So, I simply added some decomposed horse manure (free from almost any nearby rancher) and planted my seed potatoes. I fortified the potatoes every 2-3 weeks with Miracle-Gro spray fertilizer (the kind you screw onto the end of your hose) and they grew very well. When I harvested them, I had some misgivings about the amount of minerals they may have absorbed. Not wanting to waste these delightful tubers, I just ate them. I suffered no ill effects and ultimately did some of my own research. What the Miracle-Gro fertilizer contains is just a liquid form of what I would have been adding anyway. I am NOT a Miracle-Gro employee, by the way. I simply farm on a shoestring budget. This stuff works great on the rest of my garden too. No ill effects and its been that way for the past 5 years. I wish I had done my research from the start. The stuff is fine.

Why is the nutritional information listed per serving size and not per package?

Companies are required by law to list nutrition information by serving size. The serving sizes are also designated by law. This prevents companies from misleading consumers. If companies could select their own serving size or use the package size, then companies can change the amount of nutrients listed.

For example, one soda company changed their serving size from 12 oz to 8 oz. Then the company advertised that their product had 40% less calories then their competitors The soda was essentially the same nutritionally, but the company used the different serving size to mislead consumers.
